Ingredients:

1/2 cup almond butter

1/2 cup cassava flour

1/2 cup coconut sugar

1/2 cup applesauce
-
1 egg (can sub 1/4 cup applesauce)

1 tsp baking powder

1/2 cup blueberries (frozen)
Instructions:

Combine all wet ingredients first and mix super well to create a smooth mixture

Add in the dry and mix well to create the thicker batter

Add in the frozen blueberries and mix super well to evenly disperse

Pour the batter into a lined muffin tin (about 6 muffins) and leave a little space on the top for the muffins to rise

Optional: press 5-6 blueberries on top of each muffin

Bake for about 40-50 minutes at 350 or until the tops are golden brown

Cool and enjoy! Top with almond butter for the perfect snack 🙂
