Cassava Flour Blueberry Muffins

Ingredients:

  • 1/2 cup almond butter

  • 1/2 cup cassava flour

  • 1/2 cup coconut sugar

  • 1/2 cup applesauce

  • 1 egg (can sub 1/4 cup applesauce)

  • 1 tsp baking powder

  • 1/2 cup blueberries (frozen)

Instructions:

  1. Combine all wet ingredients first and mix super well to create a smooth mixture

  2. Add in the dry and mix well to create the thicker batter

  3. Add in the frozen blueberries and mix super well to evenly disperse

  4. Pour the batter into a lined muffin tin (about 6 muffins) and leave a little space on the top for the muffins to rise

  5. Optional: press 5-6 blueberries on top of each muffin

  6. Bake for about 40-50 minutes at 350 or until the tops are golden brown

  7. Cool and enjoy! Top with almond butter for the perfect snack 🙂
