This recipe may be one of my favorites to date! It happened on accident and it was truly the best “accident” recipe that’s ever happened to me. I made a huge batch of these last weekend and they were gone within three days. I wish I could say other people had the chance to eat them, but I hid them in the fridge so I could save all the goodness for myself. Ingredients:

2 eggs

1/2 cup applesauce

1/4 cup coconut sugar

1 tsp vanilla

1 and 1/2 cups brown rice flour

1/4 cup cacao powder

1 tsp baking soda

3 tbs maple syrup
-
pinch of sea salt

3 tablespoons almond milk

1/4 cup chocolate chips
-
Optional: chocolate bar pieces to top
Recipe:

Combine all dry ingredients in one bowl and mix well

Using the same bowl, just throw in the wet ingredients and stir in between to break up any clumps of dry batter that may form

Prepare a large baking tray with non stick foil or parchment paper and use a spoon to scoop out 12 cookies. The dough is thicker and does not spread, so form the cookie shape you want

Top each cookie with a piece of chocolate (optional, but also not optional you know?)

Bake at 350 for only 10 minutes! They bake quick and they’re super soft so keep an eye on them to prevent them from over baking

Let cool and enjoy! I love eating cookies right out of the oven when they’re super hot and melt in your mouth, but just watch the roof of your mouth lol!
