Double Chocolate Oatmeal Cookies

Ingredients:

  • 1/2 cup almond flour

  • 1/2 cup applesauce (can sub two eggs)

  • 1/2 cup smooth almond butter

  • 1 cup gluten free oats

  • 1 tsp baking soda

  • 1/4 cup cacao powder

  • 1 tsp vanilla

  • 1/3 cup coconut sugar

  • 1/4 cup almond milk

  • 1 crushed up chocolate bar

Instructions:

  1. Add the dry ingredients into a bowl and mix super well. Leave out the chocolate bar for now

  2. Add in the wet and stir to create a thicker batter

  3. Cut a chocolate bar into chunks and mix well into the batter

  4. Use an ice cream scooper to create even sized batter balls and scoop them onto a non stick baking sheet. Leave a little room in between each one. This batter is a little stickier, so the ice cream scooper will help with that

  5. Bake at 350 for about 20 minutes

  6. Let cool and enjoy!

    If we don’t have almond flour, is it possible to sub with oat flour?

    These were perfect. I could even do with a little less sugar to cut out a few calories, but the entire family approved!
