Well, you just found your new favorite cookie! There’s so much to love about this cookie. You will only need one bowl (less clean-up), it is gluten-free, and is already made 100% vegan. That makes this cookie perfect for the celiac in your life, the vegan in your life, and even the lactose intolerant friend that sneaks dairy sometimes, but really shouldn’t.

  • Ripe banana
  • Applesauce
  • Almond butter
  • Almond flour
  • Coconut sugar
  • Vanilla
  • Baking soda
  • Chocolate chips

You only need a few kitchen items to start making this cookie! I love how simple this recipe is in both ingredients and kitchen tools. Little fuss and little mess is all I can ask for when I step foot in the kitchen.

  • Small mixing bowl
  • Mixing utensil
  • Measuring cups: 1/4 tsp, 1 tbsp, 1/3 cup, 1/2 cup, and 1 cup
  • Baking tray
  • Parchment paper

How to make a vegan giant cookie

Preheat oven to 350F and line your baking tray with parchment paper.

In a small bowl, mash your ripe banana until smooth and then add in all the other wet ingredients, mix well! The wet ingredients in this recipe are the applesauce, almond butter, and vanilla.

Add in the dry ingredients and stir. The dry ingredients for this recipe: almond flour, coconut sugar, and baking soda.

Add in as many chocolate chips as makes you happy and stir well!

On a lined baking sheet, spread out the batter into a large cookie shape and top with extra chocolate chips.

Bake for about 25 minutes, cool, and enjoy.
